Wednesday Words {cooking}

This post doesn't have much to do with quilting but I'm so excited about our summer meals that I just had to share!

I stumbled upon Freezer Cooking on Pinterest when I was supposed to be making out my grocery list.  I started reading about the concept and looked at lots of recipes and decided to give it a try. 

I work full time and so does Steve.  And considering that it's hotter than heck around here, the last thing that I really want to do is fire up the stove or oven when we get home from work.  So that left us with easy food {not super healthy} or going out to dinner {not very cheap}. 

Basically, the concept is that you buy your ingredients, combine them and freeze them to be cooked throughout the month.  This blog does a wonderful job of explaining the process and recipes so I'll leave that part to the experts {there are lots of other blogs as well}.


It took me a few hours on Sunday to cut all the vegetables and meat and then assemble the bags.  Two hours of work for 10 meals in the freezer isn't bad at all.  Which leaves plenty of time for a summer beer.  Cheers!

Monday night we came home to beef tips ready to eat over brown rice {made in my new rice cooker that I'm completely obsessed with}.  Tuesday night we came home to sausage {chicken} & peppers.  Tonight... chicken teriyaki.

Everything is made from scratch with the exception of the organic beef/chicken broth but those are still nasty preservative-free.  This way, I can control the amount of salt, seasonings, and ingredients in our food which makes me really happy. :)

Plus, the first two meals have both made more than enough for Steve and me to have lunch the next day.

I'm pretty much sold on this process and other than the cheap freezer bags that I bought and my scary vegetable chopping techniques, Steve is a fan as well.


Now if I can just will myself into liking cottage cheese because it's healthy!  Cute Pyrex helps but it doesn't make it taste great.  It also doesn't help when I'm eating that for dessert while watching Steve eat an ice cream sandwich. ;)

So I take back what I said at the beginning about this post not having anything to do with quilting because less time in the kitchen = more time sewing!

I used to do those freezer meals when my kids were younger and loved it--I need to do it again. Thanks for the nudge to do it again. :O)

love, love, love freezer meals. I do a freezer meal swap during the school year. We make six of the same meal and swap meals every two weeks. It's so nice to grab a meal from the freezer, pop it into oven (or let it thaw out during the day if its soup) and have a delicious, healthy meal for the family. It's also a great way to collect new recipes and expose my kids to new foods.

It all sounds yummy ~ I can't eat cottage cheese anymore (silly allergies to dairy) ~ I did love eating it with a bit of honey dribbled on it with some brewer's yeast sprinkled on too. Doesn't sound all that great ~ but it tastes really wonderful!

Have they been good? We tried one of the meals from her web site and didn't like it. Unfortunately, we had made 3 bags of it, so I felt like it was a bit of a waste.

Can you post the links to the recipes (or pass them along) that you have liked? The ones you listed sounded good.

Have you tried the Kraft Simply Cottage Cheese? I think it tastes best of any I've tried. I love cottage cheese though, so much I have to control myself or it becomes a fatty food for me.

Try a pinch of splenda or the like in the cottage cheese if you're eating it with fruit...

When I worked full time I cooked meals on Sunday and warmed during the week. I made everything from burritos to roast chicken, to stew. The meals were quick and we really loved them. If you can eat salads they are a great way to do the quick meals too. We did 5 or 6 different salads all with chicken pork or beef so my husband could get his meat fix.

I will have to look into that meal planning method, as I hate figuring out what to fix every day.
I always buy our grocery stores brand(Publix) of frozen yogurt for dessert. A serving size is pretty low cal, I think 120 calories.and it is a protein and a carb, so it balances it self out. Much tastier, and makes it easier to eat better the rest of the time,

I'm loving my slow cooker this winter for the same reasons - nutritious meals and less time in the kitchen means more time to stitch!

You might try unsweetened greek yogurt instead of cottage cheese...or sometimes I actually blend the two. I don't like the graininess of cottage cheese, plus it has a lot of salt, but full-fat greek yogurt (the best!) is very, well, fatty. Blend the two together though and you have the best of both. Sometimes I can persuade myself it's like cheesecake.
